Hectic mornings are often a grab-and-go affair. Coffee? Yes! Breakfast… maybe? A latte drive-through– only if the line isn’t too long.

I’m sure you know what I mean!

Homemade breakfasts are often relegated to the weekend… and weekday morning meals are a bonus.

I have several egg bite and quick breakfast ideas at 31Daily. Probably because it is a challenge to get my family fed and out-the-door, with somewhat healthy options.

Drive through coffee is most definitely part of our lives. Which is I why I was experimenting with this particular egg bites recipe. A Starbucks Bacon Gouda Breakfast Sandwich is my son’s go-to morning morning meal.

And he is in love with egg bites. So it was a natural to begin making them at home, ready for flying-out-the-door mornings and most definitely snacks later in the day.

Ingredients for Bacon Gouda Egg Bites

  • Cooked bacon,crumbled: For a quick fix, you can buy already cooked bacon at the market.
  • Large eggs: beaten
  • Milk: Dairy milk or milk of choice. If you’re using almond milk, my family likes the sweetened almond milk best in this recipe.
  • Shredded Cheese: I’m using Gouda, which has a delicious smokey flavor, but Gruyere, cheddar, or even mozzarella is delicious too.
  • Seasoning: salt and pepper to taste and a pinch of red pepper flakes.

How to Make Bacon Gouda Egg Bites

Preheat the oven to 350°F and spray a standard-size muffin tin generously with nonstick cooking spray.

Fill muffin cups with bacon and shredded cheese.

Whisk eggs, milk, and seasoning together. Pour in the egg mixture to fill each cup about 2/3 full.

Bake for 20 minutes on the middle rack of the oven until the egg bites are just set. They will begin to pull away from the edges of the muffin tin.

Ingredients

  • 4 cooked bacon crumbled
  • 7 large eggs
  • 1/4 cup milk of choice
  • 1 ¼ cup shredded Gouda or Gruyere, cheddar, or your favorite
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • red pepper flakes to taste

Instructions

  • Preheat the oven to 350°F and spray muffin tin generously with nonstick cooking spray.

  • Whisk together the eggs, milk, salt, and pepper.

  • In each muffin cup, add bacon and shredded cheese.

  • Pour the egg mixture over the bacon and cheese in each muffin cup, leaving a little room at the top.

  • Bake for 20 minutes on the middle rack of the oven until the egg bites are just set. They will begin to pull away from the edges of the muffin tin.
