So nutricious and prep is so easy, make similarly almost weekly. A couple notes for roasting. If using sheet line w a nonstick foil, much less oil is needed. I always use cast iron skillet..why not get the added nutritional benefits!A good sub for fresh parsly is tarragon fresh or dried.Also, it's worth it to steam the cauliflower just a bit before roasting, it still browns beautifully in iron skillet but is much more tender. This keeps well for lunch the next day with grains or greens!

Great advice on the cast iron skillet. Worked best to heat it in the oven as it came to temperature. Also, I found that spreading the florets in a single layer on paper toweling and microwaving on high for one minute before starting to toss provided the blanching advantage mentioned above. I also don't care for feta and so tried this combination - shredded swiss cheese plus a few bacon bits added to the almonds and black olives instead of green.

Don’t pre blanch the cauliflower. Just roast covered for the first 10 or so minutes, then uncover and continue roasting until golden.

This is one delicious dish. And simple. I used a cast iron pan as another reader suggested and it worked much better than a sheet pan to get a char on the cauliflower. I also tossed the cauliflower with sliced almonds about 7 minutes before the 25 min was up and that worked fine to roast the almonds. Next time I may try adding some capers in lieu of the olives for a different briny taste. Really good. Thank you!

Who knew cauliflower could transform so beautifully with feta and almonds! Utterly delicious. I didn’t have any green olives so used blackbinstead.

I used pine nuts, roasted in a little butter, instead of almonds, absolutely delicious.

This was delicious. We added 2 cloves of garlic chopped to the cauliflower the last 5 minutes of roasting. Then we served it over california heirloom black rice cooked in chicken broth. We loved it and plan to have it again.

Doubled all ingredients (did go heavy on ref pepper flakes), followed directions as written, but added two cans drained and rinsed chickpeas to cauliflower (roasted them together) for a substantial side with salmon. Really nice! Thanks, nyt.

This recipe makes a great stuffing for a roast baby pumpkin! I added crumbled sweet Italian sausage, but it would be just as good without meat. I also added some leftover coconut cream to moisten. Next time I think I’ll add some croutons as well.

Needed a bit more roasting time to get tender and slightly carmelized char. Added leftover quinoa - tossed in pan with some olive oil before adding to cauliflower. Paired with garlic sauteed spinach for a wonderful vegetarian meal. We loved it! Also thought we might add roasted mushrooms next time for texture and succulence.

I thought the feta on top of the olives made it a bit to salty / briny. If I cook it again, I would probably only use one or the other. Also, I would make sure to cut my florets smaller. I kept trying, unsuccessfully, to scoop all the other other ingredients in the dish on top of the cauliflower so I could eat them together.

Yummy. Add almonds to cauliflower halfway through. Use more cheese. Added cherry tomatoes.

This was amazing! Doubled the parsley and added nickel cut pan charred vegetarian sausage and 1 cup of cooked quinoa to make it a meal vs a side! Mixture of kalamata and green olives.

Make half recipe but be generous with ingredients other than the cauliflower. Roast cauliflower in cast iron skillet; add almonds to skillet ~7 min before cauliflower is done. Capers as olive substitute. Lemon brightens a lot.

Cooked a cup of farro and tossed it with the mix. Squeezed the half lemon into the mix. What a surprisingly delicious mix of flavors and textures for so little effort. Will definitely add to our regular rotation.

I really enjoyed this and will be adding it to my side dish rotation. I would probably coat the cauliflower in a bit more olive oil and let it roast for 25-30 minutes. I didn't have any fresh lemons on hand, but I did have some preserved lemons, so I chopped about a tablespoon of them and added it to the mix.

I really enjoyed this as is, but I’m thinking next time I’ll mix a little Tahini with the lemon before adding to the cauliflower

Took the cauliflower out of the oven after 15 min to mix in chopped almonds and some salted lemon before putting in back in for another 10 min. Used grill for last couple of minutes. Used vegan feta (150g). Already made it another time.

Instead of chopping and roasting almonds in pan buy chopped almonds and mix them with the cauliflower after 15-20 minutes.While doing this also add in some smashed salt lemons before putting everthing back into the oven for final 5-10 minutes.Vegan feta also workes, I used 150g.
