The Best Easy Low Carb Pancakes Recipe… Yes, I'm calling these the best.

These pancakes top any other keto pancakes I've ever tried. (I'm looking at you keto cream cheese pancakes).

These pancakes are so similar to regular pancakes, even my junk food-loving, hater of all things healthy brother loves these. Of course he slathers them in non-keto friendly syrup, but at least he's improving.

These pancakes are light, fluffy, buttery..and oh so easy to make.

This is one easy keto recipe you can actually whip together in a hurry. Who says you can't have pancakes on a work day?

This keto pancakes recipe is made with a combination of almond flour and coconut flour with a touch of xanthan gum to improve the chewiness/softness of the pancakes.

I actually based this recipe off of my well-liked “Perfect Keto Crepes” recipe. They are actually extremely similar with this recipe just using less cream to get pancakes instead of crepes.

The original crepe recipe was actually based off of when I worked for a French bakery.

I made crepe batter and cooked crepes there almost daily for 3 years straight..so let me tell you, I KNOW MY CREPES. LOL.

Hence why pancakes wasn't a thought too far off. They are basically the same thing, one is just thinner than the other.

If you want fluffy and thick pancakes, all you have to do is up the flour content of this recipe a little more. Easy, peasy lemon squeezy.

Although, I still prefer slightly thinner pancakes myself.

Anyways enough rambling, I know you guys despise that based on some of the lovely feedback I receive, LOL so I get it, I'll get to the important stuff now!

  • Add an extra tablespoon of almond flour and 1 tsp coconut flour along with another 1/4 tsp baking powder for fluffier pancakes.
  • Use a high quality non-stick panand olive oil spray or butter for minimum sticking.
  • Cook these keto pancakes at medium heat but reduce the temperature to low if you find the under-side cooking before the center.

  • Yes, you can still try this recipe, just know that coconut flour alone has a slightly more pronounced flavour but will result in fluffier pancakes.
  • Use 1/4 cup (28g) total coconut flour for this recipe if making without almond flour

Why do I need xanthan gum for this low carb pancakes recipe, can I just make them without it?

  • Xanthan gum is essential to texture when it comes to gluten free and keto baking. It makes binds the flour with the liquid and prevents crumbliness..leading to more moist, soft and chewy baked goods. It's expensive but a very tiny amount goes a long way. Your one bag may last you a year or more!
  • Technically you don't NEED xanthan gumfor this recipe but If you plan on doing any amount of keto baking (or even cooking as it's used in sauces as well) then I'd recommend purchasing a bag. You'll be glad you did!

How To Store The Best Easy Low Carb Pancakes

  • You can store these pancakes in the fridge, covered on a plate for up to 5 days.
  • To freeze for a quick breakfast, stack cooled pancakes in a large ziplock between layers of parchment or wax paper and freeze flat, remove and let the pancakes come to room temperature, heat them in a pan, or microwave for breakfast.

  2. Add your almond flour, coconut flour, powdered monkfruit/erythritol sweetener, xanthan gum, baking powder and salt.
  3. Whisk well with a fork until everything is smooth and combined.
  4. Heat anon stick frying panover medium heat, grease with olive oil spray or butter.
  5. Add a ladle of pancake batter in the center of the pan. Cook the pancake until bubbles begin to form or you can easily slide your spatula under it (about 1-2min). Flip and cook for another minute on the other side. Repeat for the rest of the batter.
